Texas Style Blueberry Cobbler
9 x 13in pan
3 cups fresh blueberries, rinsed
1/4 cup sugar
zest of one lemon
1 1/4 cup sugar
1 1/2 cup flour
2 1/2 teaspoon baking powder
1 stick (4oz) butter plus 1/2 stick (2oz) butter - dairy or no
1 1/2 cup milk - dairy or non-dairy
Preheat oven to 350F.
Cut the 1/2 stick of butter into four pieces and place in 9 x 13 baking dish, heat in oven until melted and just starting to bubble, 5-10 minutes while preparing the rest of the ingredients.
Combine first quantity of sugar with lemon zest; stir 1 tablespoon of the sugar mixture into the berries, smashing with a fork or potato masher until the berries are largely broken up with some whole berries remaining.
Whisk together second quantity of sugar with flour and baking powder in a medium bowl. Stir in melted butter and milk until just smooth.
Carefully, remove preheating pan from oven and place on a heatproof, level surface. Pour in batter and smooth to an even layer. Dollop berry mixture all over and sprinkle with reserved lemon sugar. Return to oven and bake 40-50 minutes until berries are bubbling and batter is golden brown and crisp at the edges.
Let cool at least 30 minutes before slicing.
