Quickest Red Onion Relish
makes about one half cup
1 bunch fresh onions, preferrably red, but white will be fine
hefty pinch sugar
light pinch coarse salt
a heavy splash of white wine or rice vinegar
Slice up the onions into rounds, cut in half if large. Combine with salt and sugar in a bowl. Add vinegar just to cover and let stand at least one hour.
If you’re into it, add a sliced clove of garlic, a thin slice or three of ginger or a sprinkling of crushed red pepper.
Excellent for topping sandwiches, adding some zest to a fresh summer salad or anywhere you need a zippy condiment.
Store in an airtight container up to a month.
